Because of their smaller size, a side of Dexter beef requires less freezer space while still providing all the different cuts of beef. Depending on how a side is cut and which organ meat is retained, a typical Dexter side should provide 3 to 4 ½ apple boxes of freezer beef. Our carcass weights are averaging about 140 lbs per side and in the range of 120 to 220 lbs/side. Their smaller size is easier on the family budget and is in keeping with today’s demand for smaller, healthier and tastier cuts.
The frozen sides are custom cut to your specifications. Dianne from Davis Meats would be contacting you directly and walking you through the order process. She has practical advice to offer and they are also able to prepare some delicious specialized products such as sausages, salami, pepperoni, patties etc.
While our beef is not certified organic, they are strictly grass fed. No hormones or drugs are used. Because they are grass fed, our meat contains far less fat than “factory beef” and the fat that they do contain is of a better, healthier quality.
Here at Twin Creeks Ranch, we are committed to age old practices that lend themselves to sustainability. This is reflected in the husbandry of our cattle and the manner in which we handle our compost and our fields.
For our part, we charge $3.75/lb based on the “hook weight” which is first determined by Scott’s Meats (slaughter) and then confirmed by Davis meats (butcher). We are not involved in this determination in any way. This fee includes everything (including HST) except special products (sausage etc).
Our cattle are government inspected by veterinarians both while “on the hoof” and again post slaughter to ensure your safety and are processed in licensed government inspected facilities.

In support of our cattle educational programs here at Twin Creeks Ranch, we have become one of the largest breeders of purebred Dexter cattle in British Columbia.
Dexters originated in Ireland and are an established and proven breed. Kept originally by small landholders, they were known as the “poor man’s cow”. Today we can have confidence in the breed’s long history of quality and performance. The Royal Dublin Society records go back to 1879; their first herd book was printed in 1890.
Dexters have historically been raised for both meat and milk. A herd can be bred to specialize more in one than the other by way of the breeders selection process. Here at Twin Creeks we have, and will be, selecting for beef.
Dexters are the smallest British breed of cattle and are well known for their hardiness, docility, thriftiness and calving ease. Dexter cows mature from about 38 to 44 inches tall, bulls a few inches taller; cows weigh average 750 lbs, bulls average 1000 lbs. Dexters are solid black, dun or red in colour. Because of their smaller size and fine bone structure, Dexters provide dressed carcasses of 55-65% of their live weight; an unusually high rate of return relative to the larger beef breeds.
Dexter beef is fine-grained, tasty and naturally tender with smaller bones than most large sized animals, which means less bone waste. Dexters are particularly noted for finishing well on grass and hay. This means that the meat, the fat in particular, is healthier for us.
